- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the breadcrumbs and grated Parmesan cheese until well combined.
- Season the chicken breasts generously with salt and pepper on both sides.
- Dredge each chicken breast in the breadcrumb mixture, pressing firmly to help it adhere.
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Cook the chicken breasts for about 4-5 minutes on each side until they turn golden brown and crispy.
- Remove the chicken from the skillet and set it aside on a plate.
- In the same skillet, add the minced garlic and sauté until fragrant, about 30 seconds.
- Pour in the chicken broth and heavy cream, stirring to combine and scraping up any yummy bits from the bottom of the pan.
- Return the chicken to the skillet, spooning the creamy sauce over the top.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Garnish with fresh parsley before serving, and enjoy!
Notes
Serve with a green salad, roasted vegetables, creamy mashed potatoes, or buttery rice. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
