Description
A hearty and comforting one-pan dinner featuring juicy chicken, crispy potatoes, and vibrant green beans, all baked together for an easy meal.
Ingredients

- 1 1/2 lb chicken breast (about 3–4 pieces, approx. 1 inch thick)
- 2 T olive oil
- 2 garlic cloves, minced
- 1/3 c grated Parmesan
- 1/3 c breadcrumbs (Italian or plain—add 1 tsp Italian seasoning if using plain)
- 1/2 tsp cracked pepper
- 1/2 – 3/4 tsp sea salt
- 2 lb red potatoes, cut into bite-sized pieces
- 1 – 2 garlic cloves, minced (for the potatoes)
- 2 T olive oil (for the potatoes)
- 2 T grated Parmesan (for the potatoes)
- Salt and pepper to taste (for the potatoes)
- 1 lb fresh green beans, ends trimmed
- 1 T olive oil (for the green beans)
- 1 garlic clove, minced (for the green beans)
- 1 T Parmesan (optional, for the green beans)
- Salt and pepper to taste (for the green beans)
Instructions
- Preheat your oven to 425°F (220°C). Line a sheet pan with parchment paper or spray with cooking oil.
- In a medium bowl, toss all the ingredients for the potatoes together until well coated.
- Spread the potatoes on one-third of the pan and place it in the oven for about 10-15 minutes.
- While the potatoes are cooking, combine all the chicken ingredients in the same bowl until well coated.
- Add the chicken to the pan with the potatoes after the first 10-15 minutes.
- While the chicken cooks, toss the green bean ingredients in another bowl.
- Add the green beans to the pan with the chicken and potatoes.
- Bake for about 25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- For extra crispy potatoes, broil on high for another 4-5 minutes if desired.
- Remove from the oven, let cool for a few minutes, and enjoy!
Notes
Serve with a light side salad or fresh bread. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
