- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 8 ounces pasta (fettuccine or penne)
- 1 cup cherry tomatoes, halved
- Fresh basil for garnish
Instructions
- Start by cooking the pasta according to the package instructions. Once it’s al dente, drain it and set it aside.
- While the pasta cooks, season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat and add the chicken. Cook them for about 6-7 minutes on each side until they turn golden brown and are cooked through. When finished, remove the chicken from the skillet and slice it.
- In the same skillet, add the minced garlic and sauté it for 1 minute.
- Lower the heat and stir in the heavy cream and Parmesan cheese. Keep stirring until you achieve a smooth, well-combined sauce.
- Toss the cherry tomatoes and cooked pasta into the skillet, ensuring everything is coated in that luscious, creamy sauce.
- Top it all off with the sliced chicken and garnish with fresh basil. Serve immediately.
