Description

A hearty and delicious vegetarian lasagna loaded with layers of cheese, vegetables, and marinara sauce.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 3 cups marinara sauce
  • 2 cups spinach
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions.
  3. Heat olive oil in a pan, then sauté garlic, bell pepper, and zucchini until softened.
  4. Mix the sautéed vegetables with spinach and marinara sauce.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 4 lasagna noodles over the sauce, followed by half of the ricotta, half of the vegetable mixture, and a third of the mozzarella and parmesan cheeses.
  7. Repeat layering, ending with noodles topped with remaining sauce and cheeses.
  8. Bake for 30-35 minutes, until bubbly and golden.
  9. Let the lasagna cool for 10 minutes before slicing and serving.

Notes

For added flavor, sprinkle some Italian herbs between layers.
