Description

A delicious and hearty vegetable lasagna layered with fresh vegetables, ricotta, and marinara sauce.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, fresh
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cups mozzarella cheese, shredded
  • 1 teaspoon basil, dried
  • 1 teaspoon oregano, dried
  • Salt and pepper, to taste

Instructions

  1. Cook the lasagna noodles according to package instructions.
  2. Preheat your oven to 375°F (190°C).
  3. Sauté the onion, bell pepper, and zucchini in a skillet until softened.
  4. Mix the spinach into the vegetable mixture and cook for an additional 2 minutes.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 noodles, half of the ricotta, half of the vegetable mixture, and a third of the mozzarella on top.
  7. Repeat the layers, finishing with noodles and marinara sauce.
  8. Top with remaining mozzarella and sprinkle with basil and oregano.
  9. Bake for 40 minutes or until bubbly and golden.
  10. Let it sit for 10 minutes before slicing.

Notes

Feel free to add any other vegetables you like, such as mushrooms or eggplant.
