- 1 lb chicken breast, cubed
- 2 tbsp olive or sesame oil
- 2 cloves garlic, minced
- ½ cup soy sauce
- ⅓ cup pineapple juice
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar or apple cider vinegar
- 1 tsp cornstarch + 1 tbsp water
- 1½ cups cooked rice
- 1 cup pineapple chunks
- ½ red bell pepper, diced
- ¼ cup green onions, chopped
- Optional: sesame seeds, chili flakes
Instructions
- Cook the chicken by heating the oil in a large skillet over medium-high heat. Add the cubed chicken and sauté until golden brown, about 5-7 minutes. Remove from pan and set aside.
- Make the sauce by adding minced garlic to the skillet and sauté for 30 seconds. Then, pour in soy sauce, pineapple juice, honey (or brown sugar), and rice vinegar. Simmer for a couple of minutes.
- Thicken the sauce by mixing cornstarch with water, then stir into the sauce. Cook for an additional minute until glossy.
- Combine the cooked chicken, pineapple chunks, and diced red bell pepper into the skillet. Stir until everything is well coated.
- Add the cooked rice and mix to ensure it’s heated through.
- Garnish with fresh green onions and sprinkle with sesame seeds or chili flakes if desired.
Notes
For variety, try adding vegetables like broccoli or snap peas, or swap out the chicken for tofu for a vegetarian option.
