- 8 oz chow mein noodles
- 2 tbsp vegetable oil
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
- 3 cloves garlic, minced
- 1 tsp ginger, minced
- 3 tbsp soy sauce
- 1 tsp sesame oil (optional)
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Cook the chow mein noodles according to package instructions; drain and set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add garlic and ginger, and sauté until fragrant.
- Add mixed vegetables and stir-fry for about 3-4 minutes until they are crisp-tender.
- Stir in the cooked noodles and soy sauce, tossing to combine.
- If using, drizzle with sesame oil, and season with salt and pepper.
- Cook for another 2-3 minutes, stirring frequently.
- Serve hot, garnished with green onions if desired.
