A hearty and flavorful veggie lasagna loaded with fresh vegetables and rich cheese.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 3 cups spinach, chopped
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cups marinara sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Heat olive oil in a pan over medium heat and sauté onion, zucchini, and bell pepper until softened.
- Add chopped spinach and cook until wilted. Season with salt and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 noodles, half the ricotta cheese, half the veggie mixture, a third of the mozzarella, and more sauce.
- Repeat the layers, finishing with noodles, sauce, and the remaining mozzarella and Parmesan on top.
- Bake for 30-35 minutes until golden and bubbly.
- Let cool for a few minutes before serving.
Notes
For extra flavor, add herbs such as basil or oregano to the veggie mixture.
