- 1 cup quinoa
- 2 cups vegetable broth
- 1 sweet potato, diced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 red onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Toss together the diced sweet potato, red bell pepper, zucchini, and red onion with olive oil and seasonings.
- Spread the seasoned vegetables out on a baking sheet. Roast them for 25-30 minutes until tender.
- Rinse the quinoa under cold water. In a pot, bring vegetable broth to a boil, then add the rinsed quinoa and cook for about 15 minutes.
- Combine the roasted vegetables and cooked quinoa in a serving bowl and toss gently.
- Garnish with fresh herbs, serve warm, and enjoy!
