Romano Chicken with Lemon Garlic Pasta

Description

An unforgettable dish featuring crispy Romano chicken served over zesty lemon garlic pasta.


Ingredients

Scale
  • 1/2 lb chicken breasts (butterflied or thinly cut into cutlets)
  • Salt and pepper
  • 1/2 cup finely grated Parmesan or Romano cheese
  • 1 egg
  • Dry parsley
  • 1/2 cup panko bread crumbs
  • Oil for frying (olive oil and sunflower oil)
  • 1/2 lb linguine or spaghetti
  • Juice from 1 lemon (or to taste)
  • 3 cloves garlic (minced)
  • Zest from 1/4 lemon
  • 2 Tbsp butter (cold)
  • 23 Tbsp whipping cream (or to taste)
  • Salt and pepper

Instructions

  1. Start by placing the Parmesan or Romano cheese in a shallow dish.
  2. Beat the egg and mix it with a pinch of dry parsley. Set this aside.
  3. Add the panko bread crumbs to a third dish.
  4. Season the chicken cutlets with salt and pepper. Dredge each piece in the cheese, dip into the egg mixture, and coat with panko bread crumbs, shaking off excess.
  5. Heat oil in a pan over medium-low heat. Carefully add the chicken cutlets and cook for about 4-5 minutes per side until golden brown.
  6. Cook the pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  7. Add lemon juice, minced garlic, lemon zest, salt, and pepper to a separate pan and cook until reduced by half.
  8. Add the first tablespoon of cold butter, swirling until melted. Repeat with the second tablespoon.
  9. Pour in the whipping cream and reserved pasta water, stirring well.
  10. Add the cooked pasta and toss to combine.
  11. Serve the Romano chicken over the lemon garlic pasta.

Notes

Garnish with fresh parsley and extra cheese if desired. Pair with a side salad or roasted vegetables.
