An unforgettable dish featuring crispy Romano chicken served over zesty lemon garlic pasta.
Ingredients

- 1/2 lb chicken breasts (butterflied or thinly cut into cutlets)
- Salt and pepper
- 1/2 cup finely grated Parmesan or Romano cheese
- 1 egg
- Dry parsley
- 1/2 cup panko bread crumbs
- Oil for frying (olive oil and sunflower oil)
- 1/2 lb linguine or spaghetti
- Juice from 1 lemon (or to taste)
- 3 cloves garlic (minced)
- Zest from 1/4 lemon
- 2 Tbsp butter (cold)
- 2–3 Tbsp whipping cream (or to taste)
- Salt and pepper
Instructions
- Start by placing the Parmesan or Romano cheese in a shallow dish.
- Beat the egg and mix it with a pinch of dry parsley. Set this aside.
- Add the panko bread crumbs to a third dish.
- Season the chicken cutlets with salt and pepper. Dredge each piece in the cheese, dip into the egg mixture, and coat with panko bread crumbs, shaking off excess.
- Heat oil in a pan over medium-low heat. Carefully add the chicken cutlets and cook for about 4-5 minutes per side until golden brown.
- Cook the pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- Add lemon juice, minced garlic, lemon zest, salt, and pepper to a separate pan and cook until reduced by half.
- Add the first tablespoon of cold butter, swirling until melted. Repeat with the second tablespoon.
- Pour in the whipping cream and reserved pasta water, stirring well.
- Add the cooked pasta and toss to combine.
- Serve the Romano chicken over the lemon garlic pasta.
Notes
Garnish with fresh parsley and extra cheese if desired. Pair with a side salad or roasted vegetables.
