Description

Deliciously easy focaccia muffins infused with fresh rosemary and garlic that will impress your family and friends.


Ingredients

  • 1 packet Active Dry Yeast (or instant yeast)
  • 1 tbsp Honey (or white sugar/maple syrup for vegan option)
  • 1 cup Warm Water
  • 4 cups Bread Flour (or all-purpose flour)
  • 1 tbsp Sea Salt
  • 2 tbsp Extra-Virgin Olive Oil
  • 2 tbsp Butter (melted, or vegan butter)
  • 1 tbsp Finishing Salt
  • 2 tbsp Rosemary (or thyme/oregano)
  • 4 cloves Garlic (minced)

Instructions

  1. Activate the yeast: In a small bowl, combine warm water and honey. Stir in the yeast and let sit for 5-10 minutes until frothy.
  2. Mix dry ingredients: In a large bowl, combine flour and sea salt.
  3. Combine wet and dry: Make a well in the flour and pour the activated yeast mixture and olive oil in. Stir until a loose dough forms.
  4. Knead the dough: On a floured surface, knead the dough for 5-7 minutes until smooth and elastic.
  5. First rise: Place dough in an oiled bowl and cover. Let rise for 1 hour until doubled in size.
  6. Add garlic and rosemary: Gently deflate the dough and fold in minced garlic and rosemary.
  7. Shape the muffins: Preheat oven to 375°F (190°C), grease muffin tin, and divide dough into 12 balls.
  8. Second rise: Cover muffin tin and let rise for 30 minutes.
  9. Prepare for baking: Brush tops with melted butter and sprinkle finishing salt.
  10. Bake: Bake muffins for 20-25 minutes until golden brown.
  11. Cool and enjoy: Let cool for a few minutes before transferring to a wire rack.
