Description
This creamy, zesty Rotel Ranch Boat Dip takes just 5 minutes to make and feeds a crowd! Perfect for game days, potlucks, and parties, this no-cook dip combines cream cheese, sour cream, ranch seasoning, and spicy Rotel tomatoes for an irresistible appetizer everyone will love.
Ingredients
16 ounces cream cheese, softened to room temperature
1 cup sour cream (full-fat recommended)
1 packet (1 ounce) Hidden Valley Ranch Dips Mix
1 can (10 ounces) Rotel Original diced tomatoes with green chiles, lightly drained
1 cup shredded cheddar cheese
2 green onions, finely chopped (for garnish)
Fresh cilantro, chopped (optional garnish)
Tortilla chips, crackers, or fresh vegetables for serving
Instructions
1. Allow cream cheese to soften at room temperature for 30 minutes, or microwave unwrapped for 15-20 seconds until softened.
2. Lightly drain the Rotel tomatoes, pouring off about half the liquid. Set aside.
3. In a large mixing bowl, combine softened cream cheese and sour cream. Beat with a hand mixer on medium speed for 2 minutes until completely smooth and creamy with no lumps.
4. Add the ranch seasoning mix to the cream cheese mixture and blend thoroughly until evenly distributed throughout the dip.
5. Fold in the lightly drained Rotel tomatoes and shredded cheddar cheese using a spatula, stirring gently until all ingredients are well combined.
6. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 2 hours to allow flavors to meld (optional but recommended).
7. Transfer dip to a serving bowl, garnish with chopped green onions and fresh cilantro if desired.
8. Serve chilled with tortilla chips, crackers, or fresh vegetable sticks. Enjoy immediately!
Notes
Room temperature cream cheese is crucial for a smooth, lump-free texture. Don’t skip this step!
Keep some liquid from the Rotel can—it adds flavor and prevents the dip from being too thick.
For a spicier version, use Rotel Hot instead of Original, or add diced jalapeños.
Make ahead: This dip tastes even better after 24 hours in the refrigerator as flavors intensify.
For a hot dip version: Transfer to an oven-safe dish, top with extra cheese, and bake at 350°F for 15-20 minutes until bubbly.
Storage: Keep leftovers in an airtight container in the refrigerator for up to 4 days.
