Ingredients

  • 1 rotisserie chicken, shredded
  • 1 cup jasmine rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery. Sauté until tender, about 5-7 minutes.
  2. Add the minced garlic and thyme to the pot. Cook for an additional minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Once boiling, add the jasmine rice and reduce heat to a simmer. Cook for about 15 minutes.
  5. Stir in the shredded rotisserie chicken, season with salt and pepper, and heat through for 1-2 minutes.
  6. Serve warm, optionally garnished with fresh herbs.

Notes

Pair the soup with crusty bread or a side salad for a complete meal. You can also use vegetable broth for a vegetarian version.
