  • 2 cups shredded rotisserie chicken
  • 1 cup yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp extra virgin olive oil
  • 15.5 oz salsa verde
  • 1 can (4 oz) diced green chiles
  • 1 cup white long-grain rice
  • 2 cups chicken broth
  • 1 cup shredded Monterey Jack cheese
  • 1 can black beans, rinsed and drained
  • 1/2 cup roasted corn
  • 1 tsp chili powder
  • 1 tsp sea salt
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Dash of black pepper
  • 3 tbsp cilantro
  • Optional toppings: avocado, red pepper flakes

Instructions

  1. Start by heating the olive oil in a medium-sized pan over medium heat.
  2. Add the minced garlic and diced yellow onion to the pan. Sauté for about 2-3 minutes until fragrant and the onions become translucent.
  3. While that’s happening, grab a small bowl and mix together the chili powder, sea salt, cumin, garlic powder, and a dash of black pepper. Sprinkle this spice mix into the pan with the garlic and onion, stirring continuously to release those aromatic flavors.
  4. Next, pour in the drained and rinsed black beans, roasted corn, shredded chicken, diced green chiles, chicken broth, salsa verde, and rice. Mix everything together until well combined.
  5. Bring the mixture to a boil over medium-high heat. Let it boil for 2-3 minutes—this helps infuse all those great flavors.
  6. Lower the heat to a simmer, cover the pan with a lid, and set the timer for 15 minutes. This is where the magic happens!
  7. Once the timer goes off, check if the rice is cooked through. If it’s still a bit crunchy, set the timer for a few more minutes.
  8. After the rice has absorbed all the liquid and is perfectly tender, turn off the heat. Top your dish with the shredded Monterey Jack cheese, cover again to let the cheese melt for about 2-3 minutes.
  9. Finally, sprinkle freshly chopped cilantro over the top and add optional toppings like avocado slices and a dash of red pepper flakes for an extra kick. Enjoy!

Notes

Using rotisserie chicken saves time and adds flavor. Don’t skip the spices for best results!
