Description

These No-Bake Salted Caramel Pretzel Bites combine crunchy pretzels, smooth caramel, and rich chocolate in irresistible bite-sized treats. No oven required and ready in just 30 minutes!


Ingredients

6070 square waffle pretzels or pretzel snaps

5055 soft caramel candies, unwrapped

12 ounces chocolate melting wafers or chocolate chips

1 tablespoon coconut oil or vegetable shortening (optional)

Flaky sea salt for topping (Maldon or fleur de sel)

OPTIONAL ADD-INS:

Chopped pecans or walnuts

Toffee bits

Mini chocolate chips

Shredded coconut


Instructions

1. Line two baking sheets with parchment paper. Arrange pretzels flat on one sheet in a single layer.

2. Unwrap all caramel candies and place in a microwave-safe bowl.

3. Microwave caramels on 50% power for 1 minute. Stir, then continue heating in 30-second intervals until completely melted and smooth (2-3 minutes total).

4. Let melted caramel cool for 2-3 minutes until fluid but not scorching hot.

5. Working quickly, spoon about 1 teaspoon of caramel onto each pretzel. Spread to edges with the back of a spoon.

6. If adding nuts or toppings, press gently into warm caramel.

7. Let caramel-topped pretzels cool at room temperature for 10 minutes, or refrigerate for 5 minutes to set firmly.

8. Melt chocolate in a microwave-safe bowl on 50% power for 1 minute, stir, then continue in 30-second intervals until 75% melted. Stir until completely smooth.

9. If needed, add coconut oil or shortening to chocolate for smoother consistency.

10. Using a fork, dip each caramel-topped pretzel into melted chocolate, coating bottom and sides. Tap fork on bowl edge to remove excess.

11. Place coated bite on second lined baking sheet. Immediately sprinkle with pinch of flaky sea salt.

12. Repeat with remaining pretzels. Reheat chocolate if it hardens.

13. Refrigerate for 15-20 minutes until chocolate is completely set.

14. Store in airtight container with parchment between layers.

Notes

Work with caramel that’s melted but not scorching hot to prevent chocolate melting.

Use quality chocolate for best flavor and appearance—cheap chocolate tends to look dull.

Work in small batches of 10-12 pretzels so caramel doesn’t harden before finishing.
