- 6 large eggs
- 1 cup cooked sausage, crumbled
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
- Whisk together the eggs, salt, and pepper in a large bowl until well mixed.
- Stir in the cooked sausage, cheese, bell peppers, and onions until evenly distributed.
- Pour the egg mixture into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until set and lightly golden on top.
- Allow to cool slightly before removing from the tin. Enjoy warm or store for later!
Notes
Store in the fridge for 4-5 days or freeze for up to 2-3 months. Reheat in the microwave before serving.
