Description

Delicious and easy-to-make sausage egg muffins that are perfect for busy mornings or meal prep.


Ingredients

  • 6 large eggs
  • 1 cup cooked sausage, crumbled
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. Whisk together the eggs, salt, and pepper in a large bowl until well mixed.
  3. Stir in the cooked sausage, cheese, bell peppers, and onions until evenly distributed.
  4. Pour the egg mixture into the muffin tin, filling each cup about 2/3 full.
  5. Bake for 18-20 minutes, or until set and lightly golden on top.
  6. Allow to cool slightly before removing from the tin. Enjoy warm or store for later!

Notes

Store in the fridge for 4-5 days or freeze for up to 2-3 months. Reheat in the microwave before serving.
