Ingredients

  • 1/4 cup Vegetable oil (For frying.)
  • 3 cups Cooked jasmine rice (Optional: swap with brown rice or quinoa.)
  • 2 cups Shredded lettuce
  • 1 cup Diced cucumber
  • 1 cup Shredded carrots
  • 1/2 cup Chopped green onions
  • 2 tablespoons Sesame seeds (For garnish.)
  • 1/2 cup Mayonnaise (Optional: substitute with non-fat mayonnaise or Greek yogurt.)
  • 1/4 cup Sweet chili sauce
  • 12 tablespoons Sriracha (Adjust according to spice preference.)

Instructions

  1. Prepare the Chicken: Start by cutting the chicken breasts into bite-sized pieces.
  2. Coat the Chicken: In a mixing bowl, combine the cornstarch, salt, black pepper, garlic powder, and paprika. Toss the chicken pieces in the mixture until well coated.
  3. Fry the Chicken: Heat the vegetable oil in a large frying pan over medium-high heat. Add the coated chicken pieces and fry for about 4-5 minutes until golden brown and crispy. Remove and drain on a paper towel.
  4. Make the Sauce: Mix together the mayonnaise, sweet chili sauce, and Sriracha in another bowl.
  5. Assemble the Bowl: Start with a bed of jasmine rice, top with crispy chicken, shredded lettuce, diced cucumber, and shredded carrots. Drizzle with Bang Bang sauce and garnish with green onions and sesame seeds.
