Description

Delightful little cookie cups filled with creamy green pudding, perfect for celebrations.


Ingredients

  • 1 roll (16.5 oz) refrigerated sugar cookie dough
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 2 cups cold whole milk
  • 36 drops green gel food coloring
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 23 tbsp shamrock sprinkles or green sanding sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a 12-cup muffin tin.
  2. Divide the sugar cookie dough into 12 equal portions and roll them into balls.
  3. Place each dough ball into a muffin cup and press evenly along the bottom and up the sides to form a cup shape.
  4. Bake for 12–15 minutes until the edges are lightly golden.
  5. Let the cookie cups cool in the pan for about 10 minutes before carefully removing them to cool completely on a wire rack.
  6. Whisk the pudding mix and cold milk for 2 minutes until it thickens. Add green food coloring and mix until evenly distributed.
  7. Chill the mixture in the fridge for 15–20 minutes.
  8. Beat the heavy cream until thickened, then add powdered sugar and vanilla. Keep beating until stiff peaks form.
  9. Fill each cooled cookie cup with the green pudding.
  10. Top each cookie cup with whipped cream and sprinkle shamrock decorations on top.
  11. Refrigerate for at least 30 minutes before serving.

Notes

For a healthier version, use Greek yogurt mixed with honey as the filling.
