  • 3 cups Kodiak Cakes buttermilk pancake and waffle mix
  • 2 ¼ cups milk of choice
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted butter or coconut oil
  • Toppings: fresh blueberries, sliced strawberries, chocolate chips

Instructions

  1. Preheat your oven to 350°F and grease a quarter sheet pan with cooking spray or a light dab of butter.
  2. Whisk together the Kodiak pancake mix in a large mixing bowl until no lumps remain.
  3. Combine the milk, eggs, vanilla extract, and melted butter or coconut oil in another bowl until well blended.
  4. Gently combine the wet and dry ingredients, ensuring not to over-mix.
  5. Spread the batter evenly across the greased pan and sprinkle on your chosen toppings.
  6. Bake in the preheated oven for 18-20 minutes or until golden brown.
  7. Cool slightly before cutting into squares.
