Ingredients

  • 2 tbsp granulated sugar

  • 2 cups milk (whole or non-dairy)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 tbsp melted butter

Instructions

  1. Preheat your oven to 425°F (220°C) and grease a large rimmed baking sheet with nonstick spray.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until they blend well.
  3. In another bowl, combine the milk, eggs, melted butter, and vanilla extract. Whisk until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined; don’t overmix, or your pancakes can come out tough!
  5. Pour the batter onto the prepared baking sheet and spread it evenly.
  6. Bake for 15-18 minutes or until the pancakes turn golden brown. Cut into squares and serve warm with syrup or your favorite toppings.
