A delicious and hearty vegetarian lasagna packed with layers of rich marinara sauce, fresh vegetables, and creamy cheese.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 3 cups marinara sauce
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup spinach leaves
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Mix ricotta cheese, half of the mozzarella, and parmesan in a bowl.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles on top, followed by half of the ricotta mixture, half of the vegetables, and more sauce.
- Repeat the layers, finishing with noodles and sauce.
- Top with remaining mozzarella cheese.
- Bake for 30-35 minutes until golden and bubbly.
- Let cool for 10 minutes before serving.
Notes
For added flavor, consider sautéing the vegetables before layering them in the lasagna.
