1/4 cup olive oil for brushing bread

2 cloves garlic, halved for rubbing

4 cups cherry tomatoes, quartered

3 cloves garlic, minced

1/4 cup fresh basil, chopped

3 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon honey (optional)

8 oz fresh mozzarella pearls

Fresh rosemary sprigs for garnish

Fresh thyme sprigs for garnish

1/2 cup pomegranate seeds

Balsamic glaze for drizzling

Flaky sea salt for finishing


Instructions

1. Preheat oven to 375°F. Line two baking sheets with parchment paper.

2. Slice baguettes diagonally into 1/2-inch thick pieces (about 24-30 slices total). Brush both sides lightly with olive oil.

3. Arrange bread slices on prepared baking sheets. Toast for 8-10 minutes, flipping halfway, until golden and crispy.

4. While bread is still warm, rub each slice with the cut side of a halved garlic clove. Let cool completely.

5. In a medium bowl, combine quartered cherry tomatoes, minced garlic, chopped basil, extra virgin olive oil, balsamic vinegar, salt, pepper, and honey. Toss gently and let sit for 15-30 minutes.

6. Place a small bowl or ramekin in the center of a large round platter (14-16 inches diameter).

7. Arrange cooled bread slices in a circular pattern around the center bowl, slightly overlapping each piece to create a wreath shape.

8. Using a slotted spoon, place a generous spoonful of tomato mixture on each bread slice, draining excess liquid.

9. Nestle mozzarella pearls between and on top of the bruschetta pieces around the wreath.

10. Tuck fresh rosemary and thyme sprigs throughout the wreath to create a lush, festive appearance.

11. Scatter pomegranate seeds across the entire wreath for pops of color.

12. Drizzle lightly with balsamic glaze and finish with flaky sea salt. Serve immediately.

Notes

Toast bread completely dry for best results – it should be crispy all the way through.
