- 1 lb chicken breasts
- 1 can white beans, drained and rinsed
- 1 can diced green chilies
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup heavy cream or coconut cream
- 2 cups spinach or kale
- Toppings: avocado, cilantro, sour cream
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the chicken breasts and cook until browned on both sides.
- Stir in the diced green chilies, white beans, cumin, chili powder, salt, and pepper.
- Pour in the chicken broth and bring it to a simmer.
- Cook until the chicken is thoroughly cooked, then shred it back into the pot.
- Stir in the heavy cream and spinach, cooking until the spinach wilts down.
- Serve hot with toppings such as avocado, cilantro, and sour cream.

Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
