Ingredients

  • 1 lb chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can diced green chilies
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup heavy cream or coconut cream
  • 2 cups spinach or kale
  • Toppings: avocado, cilantro, sour cream

Instructions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the chicken breasts and cook until browned on both sides.
  3. Stir in the diced green chilies, white beans, cumin, chili powder, salt, and pepper.
  4. Pour in the chicken broth and bring it to a simmer.
  5. Cook until the chicken is thoroughly cooked, then shred it back into the pot.
  6. Stir in the heavy cream and spinach, cooking until the spinach wilts down.
  7. Serve hot with toppings such as avocado, cilantro, and sour cream.
