Instructions
- Mash the ripe banana in a mixing bowl using a fork until smooth.
- Add the egg into the bowl with the mashed banana and whisk until fully combined.
- Stir in the rolled oats and baking powder, adding a pinch of cinnamon if desired. Mix until just combined.
- Heat a lightly greased skillet or griddle over medium heat.
- Pour about 1/4 cup of batter onto the hot skillet for each pancake.
- Cook for about 2-3 minutes per side, or until golden brown and cooked through.

Notes
