Description

A rich and tender beef brisket cooked slowly to create a flavorful dish perfect for family dinners or gatherings.


Ingredients

  • 45 lb (1.8–2.3 kg) beef brisket, fat cap trimmed to about 1/4 inch
  • 2 1/2 tsp kosher salt
  • 1 1/2 tsp freshly ground black pepper
  • 1 tbsp smoked paprika
  • 1 tbsp brown sugar
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • 2 large yellow onions, thinly sliced
  • 6 cloves garlic, smashed
  • 1 1/2 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 2 bay leaves
  • Optional: 1/2 tsp liquid smoke or 1 tsp espresso powder

Instructions

  1. Prepare the brisket by patting it dry with paper towels and trimming the fat cap to about 1/4 inch.
  2. Mix the kosher salt, black pepper, smoked paprika, brown sugar, garlic powder, onion powder, cumin, chili powder, and thyme in a bowl. Rub the mixture all over the brisket.
  3. Heat olive oil in a large skillet over medium-high heat and sear the brisket for 3 to 4 minutes on each side.
  4. Add the sliced onions to the skillet and sauté for 3 to 4 minutes, then add smashed garlic and sauté for an additional 30 seconds.
  5. Pour in the beef broth and add the tomato paste, Worcestershire sauce, and apple cider vinegar. Simmer for about 1 minute.
  6. Pour the mixture over the brisket in the slow cooker or Dutch oven and add bay leaves on top.
  7. Cover and cook on Low for 8 to 10 hours or High for 5 to 6 hours, or bake at 300°F (150°C) for 3 1/2 to 4 1/2 hours in a Dutch oven.
  8. Remove the brisket and let it rest for 20 minutes, tented with foil.
  9. Strain the cooking liquid to prepare the gravy and simmer for 8 to 12 minutes until thickened.
  10. Slice the brisket against the grain into 1/4-inch slices and serve with gravy and onions.

Notes

For best results, use high-quality beef brisket. Store leftovers in the refrigerator for 3–4 days or freeze for up to 3 months.
