Description

A rich and creamy dish inspired by street corn, this Slow Cooker Street Corn Chicken is a comforting meal perfect for any occasion.


Ingredients

  • 1 lb Boneless Chicken Breasts or Thighs
  • 2 cups Corn (Fresh grilled, frozen, or canned)
  • 4 oz Cream Cheese (or vegan alternatives)
  • 1/3 cup Cotija Cheese (or Feta as a substitute)
  • 1 Lime (Juice; freshly squeezed preferred)
  • 2 cloves Garlic (Minced)
  • 1/2 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • Fresh Cilantro (Optional for garnish)

Instructions

  1. Place the boneless chicken in the bottom of the slow cooker.
  2. Add the corn on top of the chicken.
  3. Cut cream cheese into cubes and add to the slow cooker.
  4. Sprinkle cotija or feta cheese evenly over the top.
  5. Squeeze lime juice over the mixture.
  6. Add minced garlic, chili powder, smoked paprika, and onion powder; ensure even distribution.
  7. Cover and cook on low for 6 to 8 hours or high for 4 to 5 hours, until chicken is tender.
  8. Shred the chicken in the slow cooker using two forks and stir to mix.
  9. Taste and adjust seasonings if needed.

Notes

Serve it over rice, in tacos, with chips, or on a salad. Leftovers can be refrigerated or frozen for later.
