  • 6 carrots, peeled and cut into chunks
  • 6 potatoes, peeled and quartered
  • 2 cups beef broth
  • 1 tablespoon mustard seeds
  • 1 teaspoon black peppercorns
  • 2 bay leaves

Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. Add onion, garlic, and beef broth.
  3. Sprinkle mustard seeds, black peppercorns, and add bay leaves.
  4. Cook on low for 480-600 minutes, or until the meat is tender.
  5. In the last hour, add the cabbage, carrots, and potatoes.
  6. Serve hot, slicing the corned beef against the grain.
