Description
A hearty slow cooker recipe for corned beef and cabbage that’s perfect for family gatherings or potlucks.
Ingredients

- 3 to 5 pound corned beef brisket with spice packet
- 1 onion, cut into quarters
- 2 bay leaves
- 3 cloves garlic, crushed
- 2 to 3 large carrots, peeled and chopped into 2-inch pieces
- 1 pound creamer potatoes
- 2 ½ cups low-sodium chicken broth or beef broth
- 1 small green cabbage, quartered
Instructions
- Prepare the slow cooker by spraying a 6 to 7-quart slow cooker with nonstick cooking spray.
- Pat the corned beef dry with paper towels, then place the onion quarters in the bottom of the slow cooker.
- Add the corned beef on top of the onions, fat side up, and sprinkle with the contents of the spice packet.
- Place the bay leaves and crushed garlic on top of the corned beef.
- Arrange the chopped potatoes and carrots around the corned beef.
- Pour chicken or beef broth over the top of the vegetables.
- Cook on low for approximately 6 hours.
- Add the cabbage wedges after 6 hours and continue cooking for another 2 to 3 hours.
- Remove the corned beef and let it rest for 10 to 15 minutes before slicing thinly.
- Melt butter with minced garlic and parsley and drizzle over the cooked vegetables and corned beef if desired.
- Serve the sliced corned beef on a platter with the cabbage, carrots, and potatoes.
Notes
For best results, always slice against the grain and add cabbage last to avoid mushiness.
