- 1.5 lbs boneless, skinless chicken breasts
- 1 small yellow onion, diced
- 4 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 cups baby spinach, chopped
- 1 cup orzo pasta, uncooked
- Salt and pepper to taste
Instructions
- In a slow cooker, place the chicken breasts.
- Add the diced onion, minced garlic, chopped sun-dried tomatoes, heavy cream, chicken broth, and grated Parmesan cheese.
- Sprinkle in the dried oregano and thyme, then add the chopped baby spinach and uncooked orzo pasta.
- Season everything with salt and pepper to taste.
- Stir to combine all the ingredients thoroughly.
- Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 4 hours.
- Once done, shred the chicken directly in the slow cooker using two forks.
- Stir everything together before serving.
