Description

A comforting Slow Cooker Creamy Tuscan Chicken Orzo dish loaded with tender chicken, creamy sauce, sun-dried tomatoes, spinach, and Parmesan cheese.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 cups baby spinach, chopped
  • 1 cup orzo pasta, uncooked
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, place the chicken breasts.
  2. Add the diced onion, minced garlic, chopped sun-dried tomatoes, heavy cream, chicken broth, and grated Parmesan cheese.
  3. Sprinkle in the dried oregano and thyme, then add the chopped baby spinach and uncooked orzo pasta.
  4. Season everything with salt and pepper to taste.
  5. Stir to combine all the ingredients thoroughly.
  6. Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 4 hours.
  7. Once done, shred the chicken directly in the slow cooker using two forks.
  8. Stir everything together before serving.
