Description
Delightful gooey cinnamon roll bites made from sourdough discard, perfect for sharing and reducing waste.
Ingredients

- 1 cup sourdough discard (unfed)
- 1 1/4 cups all-purpose flour
- 1/4 cup plain yogurt or milk
- 1 egg
- 2 tbsp sugar
- 1/4 cup melted butter or oil
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup brown sugar
- 1 1/2 tsp cinnamon
- 2 tbsp melted butter (for rolling)
- 3/4 cup powdered sugar
- 1–2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper cups.
- Whisk together the sourdough discard, yogurt, egg, sugar, and melted butter until well combined.
- Combine the all-purpose flour, baking powder, baking soda, and salt in another bowl.
- Mix the dry ingredients into the wet ingredients gradually until just combined into a soft, scoopable dough.
- Mix the brown sugar and cinnamon together in a small bowl for the filling.
- Scoop out the dough into 1.5 tbsp balls. Roll each ball in melted butter, then in the cinnamon-sugar mixture.
- Place the coated dough balls into the prepared muffin cups.
- Bake in the preheated oven for 12–15 minutes, or until the bites are golden brown and puffed.
- Whisk together the powdered sugar, milk, and vanilla extract to create a glaze while the bites bake.
- Drizzle the glaze over the warm cinnamon roll bites after they come out of the oven.
Notes
Best enjoyed warm. Can be served with extra glaze, nuts, or fruit for added flavor.
