Description

A delightful swirl of cinnamon and sugar in a tender bread, perfect for any cozy gathering or as a special morning treat.


Ingredients

  • 1/3 cup brown sugar
  • 1 tbsp cinnamon
  • 1 3/4 cups all-purpose flour
  • 1 cup brown sugar (for the batter)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 1/3 cup melted butter
  • 1/2 cup sourdough discard
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp milk (for glaze)
  • 1/8 tsp vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mix 1/3 cup of brown sugar with 1 tablespoon of cinnamon in a small bowl for the swirl filling.
  3. Combine all-purpose flour, the remaining cup of brown sugar, baking powder, and salt in a medium bowl.
  4. Whisk together the egg, milk, melted butter, vanilla extract, and sourdough discard in a separate bowl until smooth.
  5. Fold the wet ingredients into the dry ingredients until just moistened.
  6. Pour half of the batter into the greased loaf pan and sprinkle with 3/4 of the cinnamon sugar mixture.
  7. Spread the remaining batter over the cinnamon layer and sprinkle with the rest of the cinnamon sugar.
  8. Swirl the batter gently with a knife to create a ribbon effect.
  9. Bake for 45 to 50 minutes until a toothpick comes out clean.
  10. Cool in the pan for 20 minutes before transferring to a wire rack.
  11. Drizzle with glaze made from powdered sugar, milk, and vanilla extract if desired.

Notes

Let the bread cool before slicing for best results. Experiment with the glaze by adding flavors as desired.
