Description

Delicious and customizable Southwest Chicken Wraps that are perfect for busy weeknights or picnics, bursting with vibrant flavors and textures.


Ingredients

  • 2 chicken breasts, cooked and shredded
  • 4 large tortillas
  • 1 cup bell peppers, sliced
  • 1 cup corn, canned or frozen
  • 1 cup black beans, rinsed and drained
  • 1 avocado, sliced
  • 1 cup lettuce, shredded
  • 1/2 cup ranch dressing or creamy chipotle sauce
  • Salt and pepper to taste

Instructions

  1. Combine the shredded chicken, bell peppers, corn, and black beans in a bowl. Season with salt and pepper to your liking.
  2. Lay out the tortillas on a clean surface. Spread a layer of ranch dressing or creamy chipotle sauce on each tortilla.
  3. Add a portion of the chicken and vegetable mixture to the center of each tortilla.
  4. Top with avocado slices and shredded lettuce.
  5. Fold in the edges of the tortilla and roll it up tightly, making sure everything is secure inside.
  6. Repeat this process for all tortillas.
  7. Serve immediately or wrap in foil for later enjoyment!
