- 2 chicken breasts, cooked and shredded
- 4 large tortillas
- 1 cup bell peppers, sliced
- 1 cup corn, canned or frozen
- 1 cup black beans, rinsed and drained
- 1 avocado, sliced
- 1 cup lettuce, shredded
- 1/2 cup ranch dressing or creamy chipotle sauce
- Salt and pepper to taste
Instructions
- Combine the shredded chicken, bell peppers, corn, and black beans in a bowl. Season with salt and pepper to your liking.
- Lay out the tortillas on a clean surface. Spread a layer of ranch dressing or creamy chipotle sauce on each tortilla.
- Add a portion of the chicken and vegetable mixture to the center of each tortilla.
- Top with avocado slices and shredded lettuce.
- Fold in the edges of the tortilla and roll it up tightly, making sure everything is secure inside.
- Repeat this process for all tortillas.
- Serve immediately or wrap in foil for later enjoyment!
