Ingredients

  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon hot sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup rice
  • 1 cup coconut milk
  • 1/2 cup water
  • Fresh cilantro for garnish (optional)

Instructions

  1. Mix the maple syrup, soy sauce, hot sauce, garlic powder, onion powder, salt, and pepper to create a rich marinade.
  2. Add the chicken thighs to the marinade, coating them well, and let them sit for at least 30 minutes.
  3. Rinse the rice under cold water to remove excess starch.
  4. Combine the coconut milk, water, and rinsed rice in a pot. Bring it to a boil, then reduce to a simmer, cover, and cook for about 15-20 minutes until tender.
  5. Preheat your grill or skillet over medium-high heat.
  6. Remove the chicken from the marinade and cook for 5-7 minutes on each side until fully cooked through, reaching an internal temperature of 165°F.
  7. Serve the glazed chicken thighs over the coconut-infused rice, garnishing with fresh cilantro if desired.
