- 1 cup coconut milk
- 1/2 cup water
- Fresh cilantro for garnish (optional)
Instructions
- Mix the maple syrup, soy sauce, hot sauce, garlic powder, onion powder, salt, and pepper to create a rich marinade.
- Add the chicken thighs to the marinade, coating them well, and let them sit for at least 30 minutes.
- Rinse the rice under cold water to remove excess starch.
- Combine the coconut milk, water, and rinsed rice in a pot. Bring it to a boil, then reduce to a simmer, cover, and cook for about 15-20 minutes until tender.
- Preheat your grill or skillet over medium-high heat.
- Remove the chicken from the marinade and cook for 5-7 minutes on each side until fully cooked through, reaching an internal temperature of 165°F.
- Serve the glazed chicken thighs over the coconut-infused rice, garnishing with fresh cilantro if desired.
