Description

Deliciously festive cupcakes with fluffy vanilla cake and rich buttercream frosting, perfect for celebrating St. Patrick’s Day.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon green food coloring (optional)
  • 1 cup unsalted butter (softened, for frosting)
  • 4 cups powdered sugar
  • 2 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon green food coloring (for frosting)
  • 1/2 cup gold sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C), and line your cupcake tin with paper liners.
  2. Cream together the softened butter and granulated sugar until it’s light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Pour in the milk and vanilla extract, mixing until well combined.
  5. Combine the flour, baking powder, and salt in another bowl, then gradually add to the wet ingredients.
  6. Mix in the green food coloring until you reach your desired shade.
  7. Scoop the batter into the lined cupcake tin, filling each cup about two-thirds full.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let cool completely on a wire rack.
  10. Cream together the softened butter and powdered sugar for the frosting.
  11. Add milk, vanilla extract, and green food coloring; mix until fluffy.
  12. Frost the cooled cupcakes and top with gold sprinkles.

Notes

Keep leftover cupcakes in an airtight container at room temperature for up to three days, or freeze un-frosted ones for up to three months.
