- 1.25 cups Granulated Sugar
- 2 Large Eggs (room temperature)
- 1 tsp Vanilla Extract
- 0.5 tsp Almond Extract
- 3 cups All-Purpose Flour
- 1 tsp Baking Soda
- 0.5 tsp Cream of Tartar
- 0.5 tsp Salt
- 3 drops Green Gel Food Coloring (adjust for desired shade)
- 1.5 cups Lucky Charms Marshmallows (separated from cereal)
Instructions
- Start by creaming the softened butter and granulated sugar in your stand mixer. Mix until the mixture is light and fluffy, which usually takes about 3 minutes.
- Next, add the eggs one at a time, mixing well between each addition. Then, pour in the vanilla and almond extracts along with the green food coloring. Continue mixing until you achieve a consistent green hue.
- In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt. This will help evenly distribute the dry ingredients before adding them to the wet mixture.
- Gradually add the dry ingredients to the wet mixture. Mix until everything combines nicely.
- Now, fold in 1/2 cup of the Lucky Charms marshmallows. Once they’re well incorporated, cover the dough and chill it in the refrigerator for 30 minutes.
- Preheat your oven to 350°F (about 175°C) while the dough chills. Line your baking sheets with parchment paper.
- Once chilled, use a tablespoon or cookie scoop to scoop out 2-tablespoon-sized balls of dough. Place them on the lined baking sheets, making sure to leave enough space between each cookie.
- Finally, press extra marshmallows into the tops of each cookie for that extra sugary crunch.
- Bake in the preheated oven for 9-11 minutes. Keep an eye on them; you want them to be light golden around the edges. Let them cool on the cookie sheet for about 10 minutes to set.
