- 2 cups fresh strawberries (sliced; can substitute with frozen)
- 1 (8 oz) package cream cheese (softened)
- 1 cup granulated sugar (or coconut sugar)
- 1 teaspoon vanilla extract
- 1 box yellow cake mix (or gluten-free mix)
- 1/2 cup unsalted butter (melted)
- 1 cup milk (or dairy-free alternatives)
- 1/2 teaspoon salt
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the sliced strawberries with 1/4 cup of granulated sugar in a medium bowl and let them sit for about 10 minutes.
- Beat the softened cream cheese with the remaining 3/4 cup of sugar and vanilla extract until smooth.
- Mix in a large mixing bowl the yellow cake mix, melted butter, milk, and salt until just combined.
- Pour half of the cake batter into a greased 9×13-inch baking dish. Spread the cream cheese mixture over the batter followed by the marinated strawberries, then pour the remaining batter on top.
- Bake for 45-50 minutes, or until golden brown and a toothpick comes out clean.
- Cool for 10-15 minutes before dusting with powdered sugar and serving.
Notes
For best flavor, use fresh strawberries. Feel free to experiment with different berries or toppings.
