- 1 cup sour cream
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups fresh strawberries, puréed
- 1/2 cup crushed strawberries for topping
- 1 cup graham cracker crumbs
- 1/2 cup butter, melted
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs, melted butter, and brown sugar in a mixing bowl. Press this mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and allow to cool.
- Mix cream cheese and powdered sugar until smooth. Add sour cream and vanilla extract, mixing until well combined.
- Fold in the puréed strawberries. Pour the cheesecake mixture over the cooled crust.
- Bake for 50-60 minutes or until the edges are set but the center is still slightly jiggly.
- Let it cool and refrigerate for at least 4 hours.
- Top with crushed fresh strawberries and buttery crumble before serving.
