Ingredients

  • 1 cup sour cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, puréed
  • 1/2 cup crushed strawberries for topping
  • 1 cup graham cracker crumbs
  • 1/2 cup butter, melted
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs, melted butter, and brown sugar in a mixing bowl. Press this mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and allow to cool.
  3. Mix cream cheese and powdered sugar until smooth. Add sour cream and vanilla extract, mixing until well combined.
  4. Fold in the puréed strawberries. Pour the cheesecake mixture over the cooled crust.
  5. Bake for 50-60 minutes or until the edges are set but the center is still slightly jiggly.
  6. Let it cool and refrigerate for at least 4 hours.
  7. Top with crushed fresh strawberries and buttery crumble before serving.
