Description

Delicious strawberry lemon blondies with a rich, buttery base and sweet-tart flavors that brighten any occasion.


Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups brown sugar
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking pan.
  2. In a large bowl, mix together the melted butter, brown sugar, and granulated sugar until everything is well combined.
  3. Beat in the eggs one at a time, making sure to mix well after each addition. Then, add in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients into the wet mixture, stirring until just combined. Don’t overmix!
  6. Fold in the chopped strawberries, lemon zest, and lemon juice, making sure to distribute evenly throughout the batter.
  7. Pour the batter into the prepared baking pan and spread it out evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the blondies to cool in the pan before cutting them into squares and serving.

Notes

Serve warm with vanilla ice cream or dust with powdered sugar for presentation. Store leftovers in an airtight container for up to 5 days.
