Description

  • 1 9″ frozen pie crust (baked)
  • 1 cup sugar
  • 1 1/2 cup water
  • 1/4 cup cornstarch
  • 1 lb strawberries (sliced)
  • 1 (3 oz) pkg strawberry jello

Instructions

  1. Start by baking the pie crust according to the package instructions. After it’s golden brown and perfectly baked, remove it from the oven and let it cool completely.
  2. While the crust cools, grab a large saucepan and add the sugar and water. Turn the heat to medium and gradually bring it to a simmer.
  3. Slowly whisk in the cornstarch. Make sure to mix it well to prevent any lumps. Keep stirring continuously for about 4-5 minutes until the mixture thickens and takes on a slightly transparent look.
  4. Once thickened, remove the saucepan from the heat and whisk in the strawberry jello until it dissolves completely. Let this mixture cool to room temperature while you prepare your strawberries.
  5. Now, add the sliced strawberries to the cooled jello mixture—gently toss them to coat evenly.
  6. Pour the strawberry mixture into your prepared pie crust, spreading it out evenly.
  7. Place your pie in the refrigerator and let it set for about 120-180 minutes. This allows everything to gel together beautifully.
  8. If you want to elevate your pie even more, top it with some whipped cream just before serving.

Store leftovers covered in the refrigerator for 3-4 days or freeze for 1-2 months.
