- 1 9″ frozen pie crust (baked)
- 1 cup sugar
- 1 1/2 cup water
- 1/4 cup cornstarch
- 1 lb strawberries (sliced)
- 1 (3 oz) pkg strawberry jello
Instructions
- Start by baking the pie crust according to the package instructions. After it’s golden brown and perfectly baked, remove it from the oven and let it cool completely.
- While the crust cools, grab a large saucepan and add the sugar and water. Turn the heat to medium and gradually bring it to a simmer.
- Slowly whisk in the cornstarch. Make sure to mix it well to prevent any lumps. Keep stirring continuously for about 4-5 minutes until the mixture thickens and takes on a slightly transparent look.
- Once thickened, remove the saucepan from the heat and whisk in the strawberry jello until it dissolves completely. Let this mixture cool to room temperature while you prepare your strawberries.
- Now, add the sliced strawberries to the cooled jello mixture—gently toss them to coat evenly.
- Pour the strawberry mixture into your prepared pie crust, spreading it out evenly.
- Place your pie in the refrigerator and let it set for about 120-180 minutes. This allows everything to gel together beautifully.
- If you want to elevate your pie even more, top it with some whipped cream just before serving.
