Description

A delightful and easy-to-make strawberry upside down cake featuring caramelized strawberries and a soft, buttery batter.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a round cake pan.
  2. Mix the brown sugar and melted butter in a small bowl. Pour this mixture into the bottom of the cake pan.
  3. Arrange the sliced strawberries on top of the brown sugar mixture.
  4. Beat together the granulated sugar, eggs, and vanilla extract in a large bowl until light and fluffy.
  5. Add the milk and melted butter to the mixture and combine well.
  6. Whisk together the flour, baking powder, and salt in another bowl. Gradually add to the wet mixture, mixing until just combined.
  7. Pour the batter over the strawberries in the pan, ensuring it covers them completely.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool for a few minutes, then invert it onto a serving plate.

Notes

Serve warm with whipped cream or a scoop of ice cream. Store leftovers in an airtight container in the refrigerator for 3-4 days.
