- 1/4 cup diced tomatoes
- 1/4 cup crumbled cotija cheese
- 2 tablespoons chopped fresh cilantro (for garnish)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup sour cream or Greek yogurt
- Juice of 1 lime
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
Instructions
- Heat a skillet over medium heat. Add the olive oil and sauté the corn kernels for about 3-4 minutes, or until you see them lightly charred.
- Sprinkle in the chili powder, smoked paprika, cumin, salt, and pepper. Stir everything together to coat the corn evenly and set aside.
- Mix together the sour cream, lime juice, garlic powder, and a little salt in a small bowl to create your lime crema.
- Assemble your bowls by starting with a base of cooked rice. Layer on the grilled chicken slices, followed by the charred corn mixture, black beans, diced tomatoes, red onion, and cotija cheese.
- Drizzle your lime crema over the assembled bowl and garnish with fresh cilantro.
- Serve immediately and enjoy every bite!
