Description

Fluffy, sweetened pancakes bursting with colorful mixed berries, perfect for weekend brunches or quick dinners.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup mixed berries (strawberries, blueberries, raspberries)
  • Optional: maple syrup for serving

Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a mixing bowl.
  2. Combine the milk, egg, melted butter, and vanilla extract in another bowl.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Fold in the mixed berries gently.
  5. Heat a skillet over medium heat and lightly grease it with butter or cooking spray.
  6. Pour about 1/4 cup of batter for each pancake onto the skillet.
  7. Cook until bubbles form and the edges look set, about 2-3 minutes.
  8. Flip the pancakes and cook for an additional 1-2 minutes until golden brown.
  9. Serve warm with maple syrup and extra berries if desired.
