Ingredients

- 1 cup milk

- Optional: maple syrup for serving
Instructions
- Whisk together the flour, sugar, baking powder, and salt in a mixing bowl.
- Combine the milk, egg, melted butter, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the mixed berries gently.
- Heat a skillet over medium heat and lightly grease it with butter or cooking spray.
- Pour about 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for an additional 1-2 minutes until golden brown.
- Serve warm with maple syrup and extra berries if desired.
