Ingredients

- 1 1/2 cups sugar
- 1/4 cup flour
- 4 eggs
- Zest of two lemons, very finely chopped
- Juice of 2 lemons (about 2/3 cup juice)
- 1 cup cold butter, cut into small pieces
- 1/2 cup sugar
- 2 cups flour
- 1/4 tsp baking powder (optional)
Instructions
- Blend the base: Use a pastry cutter or food processor to blend together 1 cup of cold butter, 1 1/2 cups sugar, and 1/4 cup flour.
- Press into pan: Grease a 9×13 inch baking pan and line it with parchment paper. Press the mixture evenly into the bottom of the pan.
- Bake the base: Bake at 350°F for about 20 minutes, or until the edges begin to brown slightly.
- Prepare the topping: Whisk together the remaining 1/2 cup of sugar, 2 cups of flour, 4 eggs, lemon zest, and lemon juice until the sugar dissolves.
- Let it sit: Allow the filling to sit for about 10 minutes, then whisk it again.
- Combine and bake: Pour the filling over your baked shortbread base and bake at 350°F for about another 20-25 minutes.
- Cool and serve: Let the lemon bars cool completely and sprinkle with powdered sugar before cutting into squares.
Notes
Use fresh lemons for the best flavor and allow the filling to rest for better texture.
