- 1 pound boneless skinless chicken thighs

- 1/2 teaspoon chili powder
- 2 tablespoons extra virgin olive oil
- 1 medium jalapeno pepper, thinly sliced
- 1 cup fresh raspberries
Instructions
- Mix the raspberry preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes to create the glaze.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the chicken thighs with kosher salt, black pepper, and chili powder. Add to the skillet and sear until golden brown, about 5-7 minutes on each side.
- Pour the raspberry glaze over the chicken in the skillet. Stir to coat the chicken evenly and let it simmer for another 3-4 minutes until the sauce thickens slightly.
- Add the sliced jalapeno and fresh raspberries to the skillet, cooking them for an additional 2 minutes to warm them through.
Notes
Adjust the amount of red pepper flakes and jalapenos to control spice level. For deeper flavor, marinate chicken in glaze for 30 minutes prior to cooking. Use fresh raspberries for a brighter taste.
