Description

These Sweet Tangy Honey Lime Chicken Bowls are bursting with flavor — juicy marinated chicken in a zesty honey lime glaze, served over rice with fresh veggies and avocado for a vibrant, satisfying meal.


Ingredients

1 1/2 lbs boneless, skinless chicken breasts or thighs

1/4 cup honey

3 tbsp lime juice (freshly squeezed)

2 tbsp soy sauce

2 tbsp olive oil

2 cloves garlic, minced

1/2 tsp chili powder

1/4 tsp red pepper flakes (optional)

Salt and black pepper to taste

For the bowls:

3 cups cooked rice (white, brown, or jasmine)

1 avocado, sliced

1 cup corn kernels (fresh or frozen)

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, halved

Fresh cilantro and lime wedges for garnish


Instructions

1. In a small bowl, whisk together honey, lime juice, soy sauce, olive oil, garlic, chili powder, red pepper flakes, salt, and pepper.

2. Place chicken in a resealable bag or shallow dish and pour in half of the marinade. Reserve the other half for later.

3. Marinate chicken for at least 30 minutes (up to 4 hours) in the refrigerator.

4. Heat a skillet or grill pan over medium-high heat and cook chicken 5–6 minutes per side until golden and cooked through.

5. Brush with reserved marinade during the last minute of cooking for extra glaze.

6. Remove from heat and let rest for 5 minutes before slicing.

7. Assemble bowls by layering rice, chicken, corn, black beans, tomatoes, and avocado.

8. Drizzle with extra honey lime sauce and garnish with cilantro and lime wedges.

Notes

For a low-carb version, serve over cauliflower rice or greens.

The chicken can be meal-prepped ahead and stored for up to 3 days.

Add sliced jalapeños or hot sauce for extra heat.
