- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 flour tortillas
- 1/2 cup cream cheese, softened
- 1 tablespoon taco seasoning
- 1 tablespoon olive oil
- Optional toppings: salsa, sour cream, guacamole
Instructions
- Mix the shredded chicken with cream cheese and taco seasoning until well combined.
- Heat the olive oil in a skillet over medium heat.
- Place a tortilla in the skillet and add a layer of the chicken mixture.
- Sprinkle the shredded cheese on top.
- Cover with another tortilla and cook until the bottom is golden brown, about 3-4 minutes.
- Flip the quesadilla and cook the other side until golden and the cheese melts, about 3-4 more minutes.
- Remove from heat and cut into wedges. Serve with optional toppings.
