  • 1 pound ground beef or turkey
  • 1 onion, diced
  • 1 cup corn (frozen or canned)
  • 1 can black beans (drained and rinsed)
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheese
  • Taco toppings (sour cream, salsa, avocado, etc.)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds to create a hollow space for the stuffing.
  3. In a skillet over medium heat, cook the ground meat and onion until the meat is browned and the onion is soft—about 8-10 minutes.
  4. Stir in the corn, black beans, and taco seasoning. Cook for another 5 minutes until everything is heated through and combined well.
  5. Carefully stuff the hollowed bell peppers with your delicious meat mixture, packing it down a bit as you go.
  6. Place the stuffed peppers in a baking dish, standing them upright for a straight bake.
  7. Top each stuffed pepper generously with shredded cheese.
  8. Bake in the preheated oven for 25-30 minutes or until the peppers are tender and the cheese is bubbly and lightly golden.
