Ingredients
Scale
- 4 bell peppers
- 1 pound ground beef or turkey
- 1 onion, diced
- 1 cup corn (frozen or canned)
- 1 can black beans (drained and rinsed)
- 1 tablespoon taco seasoning
- 1 cup shredded cheese
- Taco toppings (sour cream, salsa, avocado, etc.)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds to create a hollow space for the stuffing.
- In a skillet over medium heat, cook the ground meat and onion until the meat is browned and the onion is soft—about 8-10 minutes.
- Stir in the corn, black beans, and taco seasoning. Cook for another 5 minutes until everything is heated through and combined well.
- Carefully stuff the hollowed bell peppers with your delicious meat mixture, packing it down a bit as you go.
- Place the stuffed peppers in a baking dish, standing them upright for a straight bake.
- Top each stuffed pepper generously with shredded cheese.
- Bake in the preheated oven for 25-30 minutes or until the peppers are tender and the cheese is bubbly and lightly golden.
- Serve hot with your favorite taco toppings for everyone to enjoy!
