Delicious and easy-to-make enchiladas using leftover rotisserie chicken, creamy cheese, and a flavorful enchilada sauce.

- 2 cups leftover rotisserie chicken, shredded
- 8 flour tortillas
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheese (Monterey Jack or mozzarella)
- 1 can green enchilada sauce
- 1 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the shredded chicken, cream cheese, sour cream, half of the cheese, and green onions in a mixing bowl. Season with salt and pepper to taste.
- Place a portion of the chicken mixture in the center of each tortilla and roll them up tightly.
- Arrange the rolled tortillas in a greased baking dish, fitting them snugly together.
- Pour the green enchilada sauce over the tortillas.
- Sprinkle the remaining cheese on top.
- Bake for about 25-30 minutes until bubbly and slightly golden.
- Serve warm garnished with additional green onions if desired.
Notes
Do not overfill the tortillas and use a good quality enchilada sauce.
