Description

Delicious and easy-to-make enchiladas using leftover rotisserie chicken, creamy cheese, and a flavorful enchilada sauce.


Ingredients

  • 2 cups leftover rotisserie chicken, shredded
  • 8 flour tortillas
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheese (Monterey Jack or mozzarella)
  • 1 can green enchilada sauce
  • 1 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, cream cheese, sour cream, half of the cheese, and green onions in a mixing bowl. Season with salt and pepper to taste.
  3. Place a portion of the chicken mixture in the center of each tortilla and roll them up tightly.
  4. Arrange the rolled tortillas in a greased baking dish, fitting them snugly together.
  5. Pour the green enchilada sauce over the tortillas.
  6. Sprinkle the remaining cheese on top.
  7. Bake for about 25-30 minutes until bubbly and slightly golden.
  8. Serve warm garnished with additional green onions if desired.

Notes

Do not overfill the tortillas and use a good quality enchilada sauce.
