A cozy, cheesy Tater Tot Egg Casserole Breakfast that’s family‑friendly and easy to prep—perfect for brunch or lazy mornings.


Ingredients

Scale

1 (32 oz) bag frozen tater tots

8 large eggs

1 cup milk (or plant‑based milk)

2 cups shredded cheese (cheddar or favorite)

1 bell pepper, diced

½ onion, diced

Salt & black pepper to taste

Optional: spinach, mushrooms, herbs


Instructions

1. Preheat oven to 375°F (190 °C).

2. Grease a 9×13 casserole dish.

3. Arrange half the tater tots in dish’s bottom.

4. Whisk eggs, milk, salt, and pepper.

5. Pour egg mixture over tots.

6. Sprinkle diced vegetables and half the cheese.

7. Top with remaining tots and the rest of cheese.

8. Bake 30–35 minutes until eggs set and top golden.

9. Let rest 5 minutes, then slice and serve.

Notes

Don’t overcrowd with too many tots.

Use chilled tots to help them crisp.

Cover early with foil if browning too fast.
