  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • Salt, to taste
  • Cracked black pepper, to taste
  • 1 cup caramelized onions
  • 1 cup shredded cheddar or Monterey Jack cheese (optional)
  • 2 tablespoons dried parsley (for garnish)
  • 1 teaspoon cayenne pepper or hot sauce (optional)
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes and kalamata olives

Instructions

  1. Prep the ingredients: Gather all ingredients and caramelize onions in a separate skillet over low heat for about 20-30 minutes.
  2. Cook the chicken: Heat butter in a large skillet over medium-high heat. Season chicken with salt, pepper, and paprika. Add chicken to the pan and cook for 5-7 minutes on each side until golden brown and cooked through.
  3. Add garlic: Remove chicken from the pan, add minced garlic to the same skillet, and sauté for about 30 seconds until fragrant.
  4. Make the sauce: Pour in chicken broth and honey, scraping the browned bits from the bottom of the pan. Bring to a simmer.
  5. Bring it all together: Lower heat, add back cooked chicken, pour in heavy cream, and stir in caramelized onions and cherry tomatoes. Simmer for another 2-3 minutes until heated through.
  6. Add cheese and finish: If using cheese, add it over the top and allow to melt. Sprinkle with parsley and cayenne or hot sauce if desired.

Notes

For variation, increase spice or use different vegetables. For a dairy-free option, replace butter with olive oil and omit heavy cream.
